Winemaker Richard Mattner - a born-and-bred Barossa local - loves making Pepperjack wines as much as he loves drinking them, especially alongside a great steak. As he says: "Why would I need anything else?" Deep dark red with a vibrant purple rim, the nose bursts with rich aromas of blackberry, blueberry, dark chocolate, mocha, and spice. A soft and gently rounded palate with ample rich fruits smoothly laced with bucolic tannins and framed by a keen keel of stirring acidity. Plums and blackberries return along with hints of milk chocolate. The giving blackberry and plum fruit is perfectly counter-weighted by the strangely reassuring gruffness of the tannins.

Stables Shiraz has generous flavours of pepper, dark berries and plums all beautifully integrated with soft, velvety tannins and spice.

The wine has a wonderful aroma displaying dark plum, redcurrant and red cherry fruits along with subtle chocolate and a touch of oak derived spice. The palate is plump & generous with ripe fruit characters of plum, cherry and redcurrant. Mocha coffee and subtle aniseed characters are also present along with vanillan oak to balance the fruit flavours. The wine is medium-bodied with a soft mid-palate & pleasing tannin structure. It is a well balanced wine with great texture, good length and enjoyable fruit flavours on the finish.
